Extra virgin olive oil is of higher quality: it is unrefined, has a better taste, and retains all its properties.
EVOO is very stable and can be used perfectly for cooking, although many prefer to save it for raw consumption.
Look at the variety, origin, and producer. And, if you can, taste it: flavor is what makes the difference.
It doesn't expire as such, but it loses qualities over time. Ideally, it should be consumed within a year of harvest.
