Along with the classics, complete cooking, and homemade preserves, this work by the Marchioness of Parabere could not be missing. The first edition from 1936 is reproduced here, but all the recipes included are perfectly feasible today. As the author herself explained in the prologue to the first edition, these are “recipes for homemade preserves that, passed down from mothers to daughters, have come down to us, perfected over the years, and it would be a true disaster for national gastronomy to lose them.” However, the Marchioness adds all her culinary knowledge to her cookbook: she perfects some methods and adds “a bit of science and another bit of modern technique,” in addition to including some recipes for foreign preserves. Legumes and vegetables; fish and shellfish; meat, poultry, and game; fruits… the reader will find many forgotten recipes, discover how to improve others they already know, and remember the taste of some they tried in their childhood.
