It is one of those exquisite morsels that, if asked, you say that it "tastes like the sea", although if we were to get technical we would have to resort to umami to describe it. It comes from a canning company in Barbate that makes its products by hand, extracting the whole roe with the greatest delicacy and care possible.
It is perfect to enjoy on a simple slice of bread, but it is also spectacular as the icing on the cake for a recipe such as risotto or carpaccio. And to drink, a fresh white wine or a cava that you love.
